Golden Sea Star Seafood Delicacy

Whole golden sea stars, their five arms a vivid orange-gold and the central body filled with dense olive-green roe. Sea star is an old coastal delicacy — the arms are simmered for broth, while the roe is the real prize.

The roe is rich and faintly briny with a texture somewhere between crab tomalley and sea urchin. Steam the stars briefly and spoon the roe out, or drop them into a clear soup where the arms give up their sweetness.
