Fresh Premium Basa Fish Fins

Pale, pearly basa fins cut into neat triangular portions, each one threaded with fine white sinew and a soft blush of pink. This is the tender collar cut from the fin base — the part that stays silky no matter how long it sits in the pot.

The flesh is mild and clean, with none of the muddiness cheaper white fish can carry. Because the pieces are firm enough to hold together, they are equally at home in a bubbling hotpot, steamed under ginger and scallion, or pan-fried until the edges turn golden.
