Fresh Whole Golden Yellow Croaker

Whole yellow croaker with its unmistakable gilded flank — a warm gold that fades to silver along the belly, and a fine scale pattern that catches the light. Each fish is opened and cleaned along the back, so it lies flat and cooks evenly.

The flesh is delicate, sweet and almost flaky, with a thin skin that crisps beautifully in a hot pan. Yellow croaker is a favourite on Chinese tables for exactly this: a whole fish, simply fried or steamed, dressed with soy and ginger.
